I would want the fattest tire with the best performance. What size tire would this be and how much would it run? Does the bike really handle that much differently?

A little info would be helpful.
What do you ride?
What is your stock tire size?
How much clearance do you have with that tire now?

Performance on a bike entails handling also. The narrower the tire, the better it's gonna handle, not wider.
