Seriously thinking of going darkside. Wondering what size tire I should get if I'm planning on going to an 11" rear shock. Will the GYTT 205/65/15 do the trick, or do I need to go smaller to clear the fender? The fender tabs are already removed due to a turn signal relo.

That should be fine!!! I run the 65 series and it's close to the same size of the MT and you shouldn't have any issues! Now that's not a promise....LOL Sometimes your sub frame may rub slightly and you might have to grind some, but I think it has every thing to do with the shock settings being too low! JMO

Not to be snide, but I'll bet it handles like crap. It's a low bike to begin with.

Heck no!!! Tons of 1300C's have been lowered and handle great!!! You don't want to tangle with Kermit and her bike is lowered and she can fly!!
