good choice for a car tire to replace 160/70-17 on 2002 softail deuce

Checking to see if ANYONE knows of a good choice for a car tire to replace the rear tire on a 2002 Softail Deuce. Original tire is a 160/70-17 so I'll need an equivalent size in a car tire. No one in my area will even consider mounting a car tire on the rim for me so it is going to be something we will have to do ourselves but until we know the right choice for a tire, we don't even have a starting point.
