You're All a Bunch of LIARS!
I trusted you guys when I decided to go darkside. I was promised that the bike would handle almost as well as with a MC tire, but with just a little more steering input. LIARS. I just came back from riding on that CAR tire and found that not to be true.
Instead, the bike handled WAY BETTER than ever before. More input in the steering? No way. It leaned into tight curves effortlessly. A little more clumsy in tight, slow speed maneuvering? MY ASS! I could perform very tight U turns with greater ease and more control than ever before. Not only did I find absolutely no downsides to the handling, I found the handling to be far superior. I know it sounds like hyperbole, but my bike has never handled this well.
I think what you are saying about additional steering input in the turns may actually be a misdescription of what I experienced. It was just as easy to lean and steer into the curves, but the bars were more "solid" with better control. My theory is that the tire resists the turn just enough to stabilize the steering and give it a feeling of solid control, but not so much as to make it harder to corner.
I was prepared to "settle" for some loss of agility in return for longer tread life and a more solid footing on the road. To my amazement, what I found instead was better, more solid steering with more control, and as much or more agility as I have ever had. The change in the way it handles enhances the pleasure of riding because, while it still maneuvers with the same agility, there's a better feeling of control and safety.
I can't speak for others, but MY bike is a safer, better handling bike with this tire.
As for slow speed maneuvering, because of the greater feeling of stability, I was more confident in making very tight slow speed maneuvers, and easily performed tight U turns better than I ever could with a MC tire.
If it sounds like I'm a bit giddy, it's because I am. I couldn't have had a better experience. If it lasts half as long as I suspect it will, and doesn't develop any funky quirks later on, I won't be going back.
I went with the Dunlop 195/60/16, SP5000 Ultra Sport all weather tire because it has a more rounded profile at the edges of the tread. I think that, combined with the fact that I didn't get crazy with the width, makes it handle just as well as the stock but with more stability.

The irony of it all is that I was a true skeptic before I tried it. I remember telling my wife and the guys who mounted the tire that this was an experiment, and if I didn't like it, I would just switch back to a MC tire.
Before I went out on my test ride, I told my wife that I was concerned that I wouldn't like it.
My motto for riding a car tire is:
If you don't ride it,
You don't know it.
